I want to start this off by saying, you're not unhealthy or less than because you want to buy your granola. Nutrition is about finding what makes your body feel good and satisfied. If your favorite Trader Joe's granola is the reason you wake up and start your day, I say go for it.

My sister and I love to start every morning with a yogurt bowl. At this point, it's a routine for us: we wake up, go for our morning walk, and when we return, she starts on the yogurt bowls, and I make lattes. This morning we ran out of granola... a nightmare, really. I just didn't have the energy to go to the store and sift through all the options, so I decided to make my own.

Here's what I did:

  • 3 cups of rolled oats

  • 1/2 cup of cashews

  • 1/2 cup of almonds

  • 1/3 cup of pumpkin seeds (or as my sister and aunt call it, pepitas)

  • 1/3 cup of chia seeds

  • 1/3 cup of avocado oil

  • 1/4 cup of honey

  • 1/2 teaspoon of vanilla

  • 1/2 teaspoon of cinnamon

  • 1/2 teaspoon of salt

  1. Line a baking sheet with parchment paper and preheat the convection oven to 325 degrees

  2. Incorporate all the ingredients in a large bowl

  3. Distribute the mixture evenly onto the lined baking sheet for even toasting and press down

  4. Bake for 20 minutes

    1. If you like more clumps, press down on the granola halfway through baking

  5. Take the granola out of the oven and allow it to cool for at least 45 minutes

  6. Break apart with your hands or with a spoon

  7. Store in a cool, dry place
